Have you missed us? Well, we (ahem Lindsey), have been busy traveling to Wisconsin, Florida, PARIS, and the hospital – appendicitis! And now we’re back with another “get out your stretchy pants” recipe.
Ice Cream Sundae Brownies Picky Palate
Before we even start, we are stating these are probably THE BEST brownies we have ever tasted. We aren’t just saying that because we made them and we want you to make them too. THEY ARE JUST SO FREAKIN’ GOOD! Now, it’s probably no surprise that Cindy and Lindsey liked them – they’re sweet, chocolatey, gooey and have Ben and Jerry’s ice cream literally in the batter – but, the night we made these, we had three grown men go back for seconds… and thirds. So what we’re saying, single ladies, is that these are the brownies that will make him put a ring on it. Know what we mean?
We’re told you can use any ice cream you like but we are afraid we will never venture away from our favorite – Ben and Jerry’s Phish food. One thing is for sure, we will never steer away from this new favorite brownie recipe – and that’s a fact!
With ingredients this delicious, we’re lucky if we make it to the next step!
Stir the brownie mix, eggs and oil together until blended and very thick. Then add the ice cream, chocolate chips and fudge sauce… if you don’t eat it all first.
We definitely tasted the batter. A few times. Maybe more than a few.
Cover a 9×13 dish with foil and spray generously with baking spray. This makes clean up easy-breezy.
Pour mix into the foil lined pan and bake for 40 to 50 minutes. Look at the clock every minute because you want to eat the whole pan of brownies.
Let the brownies cool completely – this is probably the hardest part.
Cut into pieces and stuff these ooey, gooey, chocolatey, heavenly brownies into your mouth.
Hint: cutting small bite size pieces will result in fewer calories consumed… at least that’s what we tell ourselves.
Here’s the recipe:
1 box Brownie Mix
1/2 Cup canola or vegetable oil
Heaping 1/2 Cup of your favorite Ice Cream (I used Ben and Jerry’s Phish Food)
1 1/2 Cups chocolate chips
1/4 Cup hot fudge topping (chilled)
Preheat oven to 350 degrees F. In a large bowl mix the brownie mix, 2 eggs and oil until combined…and thick. I did NOT add the water. Scoop in ice cream, chocolate chips and hot fudge; mix until combined. Pour into a foil lined 9×13 inch baking dish that’s been GENEROUSLY sprayed with cooking spray. More is better here.
Bake for 40-50 minutes or until toothpick comes clean from center.
Let cool completely. Remove foil from baking dish, cut into squares and serve.
This recipe makes 12 brownies – that’s pretty much one serving, right?
